There are two aspects to this. One, how Linux can help educators. This is really not all that much different from how Linux can help any other industry. The other aspect is unique to education. Students can use Linux to learn about computer science.

- Grading?
- Virtual classroom/blackboard software?
How Linux can help computer science students
- Cheap or free
- Learning skills not one company's products
- Open Source
The Open Source factor can be huge. Normally, other than classwork code, all the software students use is a mystery. Now they can actually see what goes on. They can watch it in a debugger. They can make changes and see what happens.
Stduents can now get to do work on a non-trivial program. Normally, all but the most advanced classwork is trivial due to time constrains. But now, a student can dive into a small part of a large project.
Open Source developers are a lot more reachable and approachable then some corporate facade. Got a question about the why of something? Search newsgroups, mailing lists, or even ask the developer(s) yourself!
